


This is an illustration of the traditional local variety of spinach from Yamagata Prefecture, called "Akane-Hourensou". It is an Asian variety of spinach with deep cuts, and it is a reddish variant at the base and roots. Being a traditional vegetable from a cold region, it develops higher sugar content due to exposure to cold. About "Akane-Hourensou", 'Aka' means red, 'ne' means 'root', 'Hourensou' means 'spinach'; whole means 'spinach with red root'.
