What's "Leef Vegetables"?

The leafy vegetables illustrated on this page refer specifically to vegetables that have leaves, stems, and in this case, buds (flower buds) that are consumed. Sometimes, those are also called "Green Vegetables". The most commonly thought of leafy vegetables are 'spinach' and 'lettuce'. Even within spinach, there are varieties ranging from the commonly seen all-green types to those with red petioles (the stem part that is generally considered the stalk in leafy vegetables), and there are both round-headed lettuce (butterhead) and loose-leaf lettuce (leaf lettuce) that grows wildly without forming a head. Among those categorized as leafy vegetables, there are various types and visual differences. Depending on the viewing angle, condition, and season, they present distinct images each time.
